CURRIED FRUIT 
1/4 lb. butter
1/4 lb. light brown sugar
1/2 tbsp. curry powder
2 tbsp. lemon juice
15 c. fruit salad
1 1/2 lbs. spiced apple rings
Maraschino cherry halves, (optional, as garnish)
Cherry juice, as needed for color

Combine butter, sugar, lemon juice, and curry powder. Bring to boil. Drain fruit. Cut fruit in half if necessary. Cut apple rings in half, drain. Arrange fruit in pan. Add apple rings last. Pour hot sauce over fruit. Bake in 325 degree oven uncovered for 1 hour or until bubbling. Do not stir. (Place fruit in perforated counter pan when serving, sauce drains into bottom pan.) Serve hot with ham, chicken, pork, or chop suey. Serves 30.
