TREASURE OF THE SEA SCALLOPS 
20 butter crackers, crushed fine (Nickie's choice, Ritz)
1 tbsp. parsley
1/2 tsp. oregano
1/2 tsp. garlic powder
1/4 tsp. cayenne (red pepper), ground
2 oz. whipped butter or 4 tbsp. of stick butter, soft
12 oz. bay scallops
4 oz. grated cheddar cheese
Paprika

Combine crackers and spices. Stir in butter; add scallops. Coat individual casserole dishes or a shallow baking dish with non-stick spray or butter. Add scallop mixture to dish. Sprinkle with paprika. Preheat oven to 350 degrees and bake 15 minutes or until scallops are firm. Serve with fresh hot bread, salad, rice, or a baked potato. Serves 2-4.
