RED BEET CAKE 
This is an excellent cake. Healthy too. Very moist.

1 3/4 c. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
3 eggs, large
1 c. oil
1 1/2 c. pureed cooked fresh beets
6 tbsp. carob or chocolate
1 tsp. vanilla

Mix flour, baking soda, salt and set aside. Combine sugar, eggs, oil in mixing bowl. Beat in beets, chocolate and vanilla. Gradually add dry ingredients, beating well.

Bake in a preheated 350°F oven for 25 minutes.

Added 2 eggs, used butter instead of oil and 2 squares of chocolate instead. Looks very strange all mixed together. Make sure not to over fill pan. Increased baking time.

This cake turned out wonderfully, moist and tastety. Served with cream cheese frosting.
