BUTTERSCOTCH GRAHAM CRACKER
PUDDING
 
Melt in a skillet 3 tablespoons butter; add 1/2 cup of brown sugar; stir and cook until brown. Scald 1 quart of milk in the top of a double boiler and add the above mixture stirring as it cooks. Add 2 cups ground graham crackers and continue stirring.

Beat 2 eggs and 1/4 cup brown sugar together; add 1/2 teaspoon salt, 1 teaspoon vanilla and 1/4 teaspoon nutmeg. Stir into the milk mixture. Pour into a greased pan - use a 9x9 inch square baking dish. Place pan in a water bath and bake at 350 degrees for 75 minutes or 1 hour and 15 minutes.

Serve warm or cold with whipped cream, hard sauce or vanilla sauce.
