HAM EGG CASSEROLE 
4 lg. potatoes or 2 lb. bag frozen hash browns
2 tbsp. chopped onion
1 lb. cubed ham or little smokies, cut in half or browned sausage
2 tbsp. chopped parsley
8 hard boiled eggs, sliced
2 c. shredded Cheddar cheese
Sliced mushrooms (optional)

SAUCE:

1/4 c. butter
1 3/4 c. milk
1/4 c. flour
1/4 tsp. salt
Dash of pepper
1 c. sour cream

Fry hash browns lightly along with onions, parsley, and mushrooms in a little batter. Butter a 9 x 13 inch pan; put potatoes in. Salt and pepper to taste. Then do layers of meat, eggs, and cheese. Make sauce; cook until thick. Remove from heat; add sour cream. Pour over casserole. Bake at 375 degrees for 30 to 40 minutes. Sprinkle remaining cheese after removing it from oven.
