LASAGNE ROLL UPS 
2 lbs. lasagna noodles
1 lg. jar Ragu (or favorite red gravy
1 lb. ball Mozzarella cheese

FILLING:

2 lbs. Ricotta cheese
3/4 lb. Lucatella cheese (ground)
1 or 2 eggs
Parsley flakes
Salt and pepper to taste (not to much salt, lucatella cheese is salty)

Set aside 1/2 of this lucatella cheese. Mix all other ingredients well. Cook lasagna noodles about 10 minutes. Slice Mozzarella cheese (thin slices). When noodles are cooked, place noodles individually on cookie sheet. Cover each noodle with the ricotta cheese mixture. Roll up in jelly roll fashion. Place rolled up noodles in baking dish. Add Mozzarella cheese slices ont top of the rolled up noodles. Cover with gravy. Sprinkle with remaining lucatella cheese. Bake at 325 degrees until gravy is bubbly and cheese melts.
