SPICY RICE 
1 box UNCLE BEN'S® brown and wild rice (so not use seasoning)
3 med. zucchini, cut in round slices and sauteed
3 med. chopped tomatoes
7 or 8 oz. diced green chilies
2 chopped green onion (or more to taste)
16 oz. sour cream
1 tsp. each oregano, garlic powder, and pepper
1 tbsp. parsley
2-3 tbsp. cilantro
1 lb. sliced Monterey Jack cheese

In an oblong casserole baking dish, place rice, zucchini (cooked), tomatoes, chilies, and onion. Mix sour cream, oregano, garlic powder, pepper, parsley, and cilantro; pour over rice. Lay cheese on top. Bake at 350 degrees for 25 minutes.

Note: Tastes especially good after a heated School Board Meeting.
