SPANISH RICE DINNER 
3 tbsp. butter
Onion
Green pepper, diced
1 c. diced celery
Sct garlic salt
1 can (4 oz.) mushrooms
1 (6 oz.) box UNCLE BEN'S® long grain & wild rice
1/4 tsp. pepper
1 qt. canned tomatoes
1 c. water or (tomato juice) (may take more)
2 c. meat (I use weiners)
2 tbsp. parsley

Melt butter in electric fry pan. Saute mushrooms, onion, green pepper, celery, garlic salt and parsley. Add tomatoes and juice or (water). Bring to boil. Add UNCLE BEN'S® long grain rice. Simmer until thickens (can add more juice if needed). Add meat. Cook until rice tender and thickened. Good leftover warm up.
