INDIAN PUDDING | |
4 c. milk 2/3 c. molasses 1/2 c. sugar 1/2 c. cornmeal Salt to taste Cinnamon to taste Ginger to taste 4 tbsp. butter Raisins, dates or apples to taste Heat 4 cups milk in double boiler; add molasses, sugar, cornmeal, spices and butter. Cook 20 minutes, then add fruit. Pour into greased dish and bake 2 hours. Add 1 cup more milk, cream or milk; cream and a little butter. Bake 1 hour longer. If each day, you add 1 cup or less of cream and butter (add less liquid each day) and rebake a short time, on the 4th day it will be "licken' good". (An old New England recipe.) Serves 12. |
