NEW ENGLAND INDIAN PUDDING 
4 tbsp. + 1 tsp. yellow cornmeal
1/3 c. molasses
3 1/4 c. hot milk
3/4 c. cold milk
1/3 c. + 1 tbsp. white sugar
1/4 c. brown sugar
2 eggs, beaten
2 tbsp. butter
2/3 tsp. salt
1/2 tsp. each: ginger and cinnamon
1/4 tsp. allspice

Mix cornmeal and molasses; add hot milk. Cook over medium heat until mixture resembles thin gruel. Keep stirring. Pour into mixing bowl. Add all other ingredients except cold milk. Mix exuberantly while you sing one stanza of "Annie Laurie." Pour into greased baking dish. Bake at 300 degrees for 40 minutes. At end of 20 minutes, stir well. At 40 minutes add cold milk. Stir well. Bake 2 more hours, but don't dry out.
