YAM SURPRISE 
6 yams, cooked
1 c. brown sugar
1 1/2 tbsp. cornstarch
1 tsp. grated orange rind
1/8 tsp. cinnamon
1 c. apricot juice
2 tbsp. butter
1/2 c. chopped pecans
1 c. drained cooked apricots

Cook yams and cut in halves and arrange in buttered 8x12 inch pan. Combine sugar, cornstarch, orange rind, cinnamon and apricot juice and cook until thick, stirring constantly. Stir in apricots, butter and pecans. Pour over yams. Bake in 350 degree oven for 30 minutes. Serves 6 to 8.
