DORA'S SALSA CHICKEN THIGHS 
This recipe works great with the large bags of chicken thighs they sell at Walmart.

12 chicken thighs (with skins removed)

Marinade Sauce:

3/4 cup salsa (your choice)
1/3 cup honey
1/4 cup each of soy sauce and orange juice
2 tbsp. Dijon mustard
1 1/2 tbsp. grated fresh ginger
2 tsp. olive oil

Marinate chicken thighs in sauce overnight. Bake in a covered casserole dish at 350°F for one hour. Lift chicken out when done and thicken sauce with 2 tablespoons cornstarch and 1/4 cup water. Return chicken to casserole when sauce is thickened and serve with rice, pasta or potatoes. Delicious, Enjoy!
