LIVER AND ONIONS 
1 lb. calf's liver
Water
Salt and pepper to taste
Flour
Oil
4 onions, thinly sliced
2 tbsp. butter

Place liver in large bowl, and cover with boiling water, let stand 5 minutes. Remove liver from water and remove membrane from meat, rinse and pat dry with paper towels. Sprinkle liver with salt and pepper and roll in flour. In large skillet, melt butter and saute onions to desired degree of doneness. Remove and keep warm. Add oil and fry liver until golden brown crust forms on both sides. To serve, place liver on platter and cover with onions.
