HEALTHLY AND GOOD LASAGNA | |
1 package whole wheat lasagna noodles 1 pound lean ground beef or ground turkey or a combo of both 2 jars of your favorite pasta sauce 1 med zucchini 1 1/2 cups kale 1 med onion 2-3 cloves garlic 2 tbsp ground flax seed 1/4 cup parsley 1 teaspoon each of mint,oregano and basil 2 cups low fat mozzarella cheese 500ml low fat cottage cheese 1 large egg Preheat oven 350°F brown meat and drain off any fat. In a food processor add all veggies and process until fine.(that way your kids won't notice the green stuff so much nor can they pick it out) add it to the meat and combine then add pasta sauce, fax seed and herbs (except parsley) and let simmer for 15 minutes. Mix the cottage cheese, egg and parsley together. In a lasagna pan add a base of sauce first, then noodles (no need to precook them. As long as they are cover in sauce well they will cook just fine.) then all the cottage cheese, then noodles and then sauce and repeat until all are used up. Cover with mozzarella cheese cover lasagna with tin foil and bake for 45 min. Remove tinfoil and bake another 15 min until cheese is melted and a bit brown. You could use spinach instead of kale or use a combo of both. It is just and easy way to include supper healthy veggies without anyone noticing. Submitted by: morgan |
