ROTEL MEATLOAF 
1 to 2 lb. lean ground beef
1 or 2 eggs (depending on how much beef)
1 (10 oz.) can Rotel diced tomatoes, drained
1 1/2 cups French fried onions (French's)
1/2 to 1 cup ketchup (Hunts)
seasonings of your choice (I use onion & garlic powder)

Preheat oven to 350°F.

In a bowl combine all ingredients (except ketchup) and mix well, but don't over-mix. Place into a meatloaf pan or if you don't have one form into a loaf shape in a baking dish. Top with ketchup and place in oven.

Bake at 350°F for about an hour.

I usually serve with homemade mashed potatoes and some kind of vegetable as a side.
