SUPER SWISS STEAK 
2 lb. round steak (1-inch thick)
1/2 c. all-purpose flour
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. (1/2 stick) butter or shortening
1/2 c. green pepper, chopped
1/2 c. celery, chopped
1/2 c. onion, chopped
2 tsp. Worcestershire sauce
1 tbsp. all-purpose flour
3 c. water

Combine flour, salt and pepper. Pound flour and seasonings into steak, using a mallet or the edge of a saucer. Cut the steak into serving pieces.

Melt butter or shortening in skillet, brown steak well on both sides. Transfer steaks to casserole dish. Add green pepper, onions and celery to drippings in skillet. Cover until golden.

Blend 1 tablespoon of flour in. Add Worcestershire sauce and water. Bring to boiling point, stirring constantly. Pour the gravy and vegetables over the steaks. Bring to boiling point, turn to low and continue cooking 1 1/2 hours or until the steaks are tender

Serves 6.
