SOUTHWEST MEATLOAF | |
1 lb. ground beef chuck 1/2 onion, chopped 1/2 bell pepper, chopped 1 (10 oz.) can Rotel tomatoes w/ chilies 1/2 cup bread crumbs 1 egg 1 cup shredded mild cheese garlic powder, to taste cumin, to taste salt and pepper, to taste 2 tbsp. ketchup (Hunts) 1 env. taco seasoning TOPPING: 1/2 cup ketchup parsley flakes, for garnish Preheat oven to 350°F. Sauté onion, bell pepper and can of tomatoes. Add to ground beef in mixing bowl. Add bread crumbs, egg, cheese, seasonings, ketchup. Also add whole envelope of taco seasoning. Stir well to combine. Put into greased loaf pan. Cover with foil. Bake at 350°F for 30 minutes. Drain any excessive oil from loaf. Add 1/2 cup ketchup to top of loaf and sprinkle parsley on top for presentation. Place loaf back in oven and bake, uncovered, for 15 minutes more. Serves 8. Submitted by: GlitzNGlam83 |
