APPLESAUCE CAKE 
1 3/4 c. sifted cake flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1/4 tsp. cloves
1/2 c. shortening
1 c. sugar
1 egg, beaten
1 c. unsweetened applesauce

Sift flour, soda, salt, and spices together 3 times. Cream shortening with sugar until fluffy. Add egg and beat thoroughly. Add sifted dry ingredients and applesauce alternately in small amounts, beating well after each addition. Pour into greased pan and bake in moderate oven (350 degrees) for 45 to 60 minutes.

Makes 1 (8 x 8 inch) cake or 1 small tube cake or double recipe for big tube pan. Frost with butter icing.

Other Suggestions: Frost with Caramel Fudge Icing.

Omit cinnamon and cloves, reduce allspice and nutmeg to 1/2 teaspoon each. Add 1 cup seedless raisins.

Omit allspice and cloves, reduce cinnamon to 1 teaspoon, and nutmeg to 1/2 teaspoon. Add 1 cup chopped raisins and 1/2 cup chopped nut meats.

DOUBLE INGREDIENTS:

3 1/2 c. flour
2 tsp. baking soda
1/2 tsp. salt
3 tsp. cinnamon
2 tsp. allspice
2 tsp. nutmeg
1/2 tsp. cloves
2 sticks butter
2 c. sugar
2 eggs
2 c. applesauce.
