APPLESAUCE-RAISIN SNACK CAKE 
2 c. raisins
2 c. water
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1 c. unsweetened applesauce
2 eggs
1/2 c. vegetable oil
3 tbsp. liquid sugar substitute
cooking spray

Place raisins and water in a medium saucepan; bring to a boil. Cover; remove from heat and let stand 5 minutes. Drain raisins, discarding water. Combine flour and next 3 ingredients, stirring well. Set aside. Combine applesauce and next 3 ingredients in a large bowl. Add flour mixture to applesauce mixture, stirring until blended; fold in raisins. Pour batter into a 13 x 9-inch pan coated with cooking spray.

Bake at 350°F for 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes; remove from pan and let cool completely on wire rack.

Yield: 12 servings.
