CARROT LAYER CAKE 
2 c. sugar
3 c. carrots, grated
4 eggs
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. Wesson oil
1 1/2 c. pecans, chopped
2 c. plain flour
2 tsp. baking powder

Beat eggs and sugar together. Add all other ingredients except oil and flour. Add these last. Beat 4 minutes at medium speed. Bake at 350 degrees for 25 minutes.

ICING:

1 stick butter
2 tsp. vanilla
2 1/2 boxes powdered sugar
1 (8 oz.) cream cheese

Mix well until smooth. Frost cool cake.
