GRATED CARROT LAYER CAKE 
2 c. sugar
1 1/4 c. salad oil
4 eggs
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
3 c. grated carrots
1 c. chopped walnuts

Blend sugar and oil. Add eggs. Mix dry ingredients together and add to mixture. Blend in carrots and nuts; mix well. Grease 3 (8") round pans and bake for 40 to 50 minutes. Allow cake to cool before adding cream cheese frosting.

FROSTING:

1 (8 oz.) pkg. cream cheese
1 1/2 sticks butter
1 lb. pkg. powdered sugar
2 1/2 tsp. vanilla

Blend cheese and butter together in mixer. Be sure and leave cream cheese and butter at room temperature until soften. Gradually add sugar and vanilla. Beat until creamy.
