CALAMARI SALAD 
1 1/2 lbs. cleaned squid
1/2 lemon
1 c. diced celery
1/2 c. red onion, sliced
3 tbsp. lemon juice
2 tbsp. drained capers
2 tbsp. chopped parsley
1 tbsp. olive oil
1 clove garlic
1/2 tsp. oregano
Dash fresh ground pepper
Garnish 2 lemon wedges

Cut cleaned squid into bite size pieces. Place in saucepan. Add lemon half and water to cover. Bring to a boil. Cook until tender, 5 minutes maximum. Drain and refrigerate until chilled. To serve combine remaining ingredients except lemon wedges. Add squid and toss. Garnish with lemon wedges.

I don't like oregano so I skipped that ingredient. However, the salad sorely needs salt and more pepper. Added more olive oil for moisture too. I used calamari that needed to be cleaned; a friend gave to me. The process of cleaning required an extra hour in prep. Next time, I'm buying already cleaned calamari. Result overall was very good.
