2 c. cracker wheat 2 lg. tomatoes 2-3 green onions 3 bunches of flat leaf parsley 1 med. cucumber 1/3 c. olive oil Juice of 2 lemons Salt and pepper to taste Wash cracker wheat; set aside. Chop tomatoes, green onion, and cucumber into very small pieces. Chop finely flat leaf parsley excluding stems. Mix above ingredients with lemon juice, olive oil, and add salt and pepper to taste. OPTIONAL: You may also add 1/4 head of lettuce, finely chopped. Can refrigerate up to 4 days. |
