EASY VEGETARIAN CHILI - TEXAS
STYLE
 
1 c. chopped onions (2 med. sized onions)
4 cloves garlic, minced
2 c. vegetable stock (or vegetable bouillon)
1 (15 oz.) can whole tomatoes, cut up with juice
1 (6 oz.) can tomato paste
3 tbsp. chili powder
1 tsp. vinegar (cider or wine)
1 tsp. ground cumin
1/2 tsp. ground coriander
1/2 tsp. oregano
1/4 tsp. fresh ground black pepper
3 whole dried red peppers (hot!)
1 (16 oz.) can red or kidney beans, drained

In a 4 quart saucepan, simmer onions and garlic in 3 tablespoons of vegetable stock until translucent. Add all remaining ingredients except the beans and simmer for 45 minutes. Add beans and simmer 15 minutes more. Serve plain or over rice, baked potatoes or corn bread. Makes about 8 cups of chili.

It's good... not enough depth in flavor for my liking. I also have a hard time with the name "Texas-style". Texas-style chili doesn't have beans!

I tried it today with my class and it was very good for a chilli with no meat. We used tomato juice instead of canned tomatoes, crushed red pepper flakes instead of red peppers, chicken stock instead of vegetable stock and no coriander. Enjoy!

Actually "Texas" chili does have beans. The Northerners typically use the wrong beans - kidney beans. Once they do that it becomes "kidney bean soup." My family from Texas would often laugh at what ppl up here would try to call "chili." Don't add corn. Don't use ground chicken or ground turkey. Try to use steak or at least stewing beef if you are going for authentic. Also, Texas chili is supposed to be thick - otherwise once again, you have soup. I learned to cook chili from my dad, mom, and grandmother (in other words, old family recipe) and because I kept it the way I was taught, I've had ppl fight over it and even eat it for breakfast :)

Texas Chili doesn't have tomato or beans. Dried red peppers? There are many types of dried chili peppers. I wonder which one you mean. There doesn't seem to be much to bite into here.
