REBECCA BOONE'S PUMPKIN PIE 
Unbaked pie shell
2 c. pumpkin
1/2 c. cream
4 beaten eggs
1 1/4 c. sugar
1/2 tsp. salt
1 1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 stick melted butter
1 tbsp. sifted flour
1 tbsp. bourbon (optional, can substitute vanilla)

Mix all the above ingredients together and pour into unbaked pie shell. Bake in 400 degree oven for 45 minutes or until done. Insert a knife in center to test for doneness. When it comes out clean, the pie is done. Serve plain or topped with whipped cream and walnuts or pecans sprinkled on top.
