PUMPKIN-PECAN BREAD 
1 3/4 c. flour
1 tsp. baking soda
3/4 tsp. salt
3/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. sugar
1/2 c. oil
2 eggs or egg substitute (or 4 egg whites)
1/3 c. water
1 c. canned pumpkin
1/2 c. chopped pecans

Mix all ingredients well, add nuts. Pour into 2 loaf pans. Bake at 350 degrees for 1 hour or until wooden toothpick inserted in center of loaf comes out clean
