PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin (canned)
3/4 c. flour
1/2 tsp. cinnamon

Mix well - pour on greased wax paper in cookie sheet. Sprinkle with 1/2 cup chopped nuts on top. Bake at 350 degrees for 15 minutes. Turn out on towel. Remove wax paper and sprinkle with 1/2 cup powdered sugar and spread cream cheese filling.

CREAM CHEESE FILLING:

2 tbsp. butter
8 oz. cream cheese
3/4 tsp. vanilla
1 c. powdered sugar
1 c. chopped nuts

Mix, spread on roll made on cookie sheet. Roll like jelly roll. Wrap in foil and chill for 2 hours.

SUBSTITUTE - WHIP CREAM:

1 c. sugar
1 egg white
1 c. fruit juice (juice like from canned peaches)

Whip all three together.
