PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
1 tsp. ginger
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
3/4 c. flour
1 tsp. baking powder

Beat eggs; add sugar and beat. Add pumpkin, lemon juice, then add all dry ingredients. Spread in greased and waxed papered jelly roll pan. Bake at 375 degrees for 15 minutes. Turn onto a cloth towel with powdered sugar. Roll like jelly roll with towel until cool.

FILLING:

1 c. 10x sugar
8 oz. cream cheese
4 tbsp. butter
1/2 tsp. vanilla

Whip and spread on cool cake, then roll again.
