COCONUT CUSTARD PIE 
1 baked pie shell
7/8 c. granulated sugar
1/3 c. flour
1/8 tsp. salt
2 eggs
2 c. scalded milk
1 tsp. vanilla
1 c. coconut, shredded

Add coconut to milk; mix flour, granulated sugar and salt. Separate eggs; add beaten yolks to dry ingredients. Pour hot milk on this mixture, pour into saucepan. Cook until thickened, stirring constantly. Add flavoring. Pour into pie shell. Cover with meringue. Brown in oven. Suggestion: add 1/2 cup cold milk to egg yolk before adding to the dry ingredients. This prevents lumping.
