FRESH APPLE CAKE 
2 c. unsifted all purpose flour
2 c. granulated sugar
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
4 c. finely diced pared raw apple (about 1 1/2 lb.)
1/2 c. chopped walnuts
1/2 c. soft butter
2 eggs
Confectioners' sugar

Preheat oven to 325 degrees. Grease a 13 x 9 x 2 inch baking pan. Into large bowl, sift flour with granulated sugar, soda, cinnamon, nutmeg, and salt. Add apple, nuts, butter and eggs. Beat until just combined it will be thick. Turn into prepared pan.

Bake 1 hour or until top springs back when lightly pressed with fingertip. Cool slightly in pan on wire rack. Sprinkle with confectioners' sugar. Serve warm, cut into squares. Top with whipped cream or ice cream if desired. Makes 10 to 12 servings.
