FRESH APPLE CAKE 
3 lg. apples, peeled & finely chopped
1 c. packed brown sugar
1 c. granulated sugar
2 eggs, room temperature
1 c. vegetable oil
1 c. chopped walnuts
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. baking soda
2 tsp. vanilla

Pour sugar over apples and let sit at least 20 minutes. Beat eggs and add remaining ingredients. Add to apples and sugar and mix well. Bake in well greased and floured bundt or tube pan for 1 hour at 350 degrees.
