EMERALD ISLE PIE 
1 pkg. lime gelatin
1 1/4 c. hot water
1 tsp. grated lime rind
3 tbsp. lime juice
1 pt. vanilla ice cream
1 baked 8-inch pie shell
Whipped cream

Dissolve the gelatin in hot water in a 2-quart saucepan. Add lime rind and lime juice; stir well. Add the ice cream by spoonful; stir until melted. Chill until thick, but not set. Pour into the baked pie shell and chill until firm. Garnish with whipped cream
