SWEET POTATO CASSEROLE | |
3 c. mashed sweet potatoes 1 c. sugar 1/2 c. milk 1/4 c. butter, softened 3 eggs 1 tsp. salt 1 tsp. vanilla 1/2 tsp. cinnamon Topping: 1/2 c. brown sugar 1/2 c. chopped pecans 1/4 c. plain flour 2 tbsp. butter In a mixing bowl, beat sweet potatoes, sugar, cinnamon, milk, butter, eggs, salt and vanilla until smooth. Transfer to a greased 2-quart baking dish. In a small bowl, combine brown sugar, pecans and flour. Cut in butter until crumbly. Sprinkle over potato mixture. Bake, uncovered, at 325°F for 45 to 50 minutes. |
