IMPOSSIBLE TAMALE PIE 
1 lb. ground beef
1 c. frozen corn, thawed, drained
1/2 c. chopped onion
3 eggs
1 (1 1/4 oz.) env. taco seasoning mix
1 (8 oz.) can stewed tomatoes, drained and chopped
1 1/2 c. milk
2/3 c. buttermilk baking mix
1/3 c. yellow cornmeal

Heat oven to 400 degrees. Grease a 10 x 1 1/2 inch pie plate. Cook and stir ground beef in 10 inch skillet until brown. Drain. Stir in onion and seasoning mix. Spread in pie plate. Sprinkle with tomatoes and corn. Beat in eggs, milk, baking mix and cornmeal until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Bake until knife inserted in center comes out clean - 30 to 35 minutes. Cool 5 minutes. Yields 6 to 8 servings.
