IMPOSSIBLE TACO PIE 
1 lb. ground beef
1/2 c. chopped onion
2 env. (1 1/4 oz. each) taco seasoning mix
3/4 c. Bisquick
1 1/4 c. milk
3 eggs
1 c. shredded cheddar cheese
1/4 head lettuce, shredded
1 tomato, diced
1/3 c. sliced ripe olives

Hat oven to 400 degrees. Grease square baking dish 8 x 8 x 2 inches. Cook ground beef and onion until meat is brown; drain. Stir in seasoning mix; spoon into plate. beat Bisquick, milk and eggs with wire whisk until almost smooth, about 1 minute. Pour into plate. Bake until knife inserted in center comes out clean, about 25 minutes. Sprinkle with cheese. Bake until cheese is melted, about 2 minutes. Cool 5 minutes. Garnish with lettuce, tomatoes, olives and, if desired, sour cream. Makes 6 to 8 servings.
