NAM'S FAMOUS CHOCOLATE COCA-COLA
CAKE
 
Cake:

1 prepared and cooled vanilla or yellow cake, in round layers or cupcakes

Nam's Famous Chocolate Coca-Cola Icing:

1/2 cup (1 stick) butter
3 heaping tablespoons Hershey's Cocoa Powder
6 tablespoons Coca-Cola
1 teaspoon pure vanilla extract
1 (1 lb.) box confectioners' (10X) sugar
OPTIONAL: 1/2 cup finely chopped pecans may be added

In a medium saucepan over low heat, melt butter. Add cocoa powder and whisk until smooth. Add vanilla and Coca-Cola, and continue whisking until smooth. Do not let the mixture boil. Remove from heat and add confectioners' (10X) sugar, whisking until smooth.

Using an off-set spatula or paddle knife, ice the bottom cake layer, working quickly before the icing sets. Add the second layers and ice the top, using a back-and-forth motion to create a pleasing pattern on top. Add additional icing to the sides if needed. If icing cupcakes, the icing may be piped.
