CANDIED YAMS 
5 lg. Sweet Potatoes
2 tbsp. Nutmeg
2 1/2 c. sugar
1 c. butter

Peel potatoes, cut and put in hot water to prevent them from turning dark. Wash in hot water. Put on to boil. When half tender, pour all water off. Pour sugar over potatoes, let set for 3 minutes. Then put on to cook over medium flame. Add nutmeg, butter and cook until the sugar will pull the water that's left in potatoes out as cooked making its own syrup. Serves 4.
