6 med. size yams 3/4 c. brown sugar 1 tsp. grated lemon rind 2 tbsp. flour 1/4 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. nutmeg 4 tbsp. butter 1 c. orange juice Boil yams in their jackets until tender but firm (about 10 minutes). When cool enough to handle, peel and slice. Mix sugar, lemon rind, flour, salt, cinnamon and nutmeg. Place half of the sliced yams in a medium sized casserole dish. Sprinkle with the spiced sugar mixture. Dot with half the amount of butter. Add a second layer of yams, using the rest of the ingredients in the same order as above. Add orange juice. Bake at 350 degrees for 45 minutes. Yields: 4-6 servings. |
