CANDIED YAMS 
6 med. yams, cooked, peeled & sliced
1/2 tsp. salt
1/2 tsp. ground mace
1/2 tsp. cinnamon
3/4 c. brown sugar
3 tbsp. butter
1/2 c. orange or pineapple juice
1/2 c. water

Arrange yam slices in layers in large, well greased, shallow casserole. Sprinkle each layer with salt, mace, cinnamon and brown sugar and dot with butter, saving 1 tablespoons for the top. Mix fruit juice and water and pour over. Dot top with butter and bake in moderate oven at 375 degrees for 30 minutes. Baste 2 or 3 times while baking. Serves 8.
