SPINACH WITH PINE NUTS AND
RAISINS
 
2 cloves garlic, minced
3 tbsp. olive oil
1 1/2 lbs. fresh spinach, trimmed, washed and drained
Salt and pepper to taste
1/2 c. raisins, tightly packed and then rinsed and softened
1/2 c. pine nuts, lightly toasted (toast for 6-8 minutes at 350 degrees)

In large skillet, saute garlic in olive oil until soft. Add spinach and cook until tender and fairly dry. Add pine nuts and raisins and cook until moisture is barely absorbed. Season with salt and pepper.
