SPINACH WITH SOUR CREAM AND
TOASTED PINE NUTS
 
2 tsp. pine nuts
1 tbsp. olive oil
1 sm. onion, chopped fine
1 lb. fresh spinach, washed, dried, and chopped coarse
1 tbsp. sour cream
1 tsp. fresh lemon juice

In large skillet, toast pine nuts in oil, stirring for 2 minutes. Transfer to small dish. In same skillet, cook onion. Add spinach and cook for about 3 minutes. Stir in sour cream, lemon juice, then salt and pepper to taste. Sprinkle mixture with pine nuts. Serves 2.
