TAMALE PIE | |
1 lb. hamburger 1 c. chopped onion 1 (16 oz.) can stewed tomatoes plus 2 (8 oz.) cans tomato sauce, plus about 2/3 c. water (or any combination of tomatoes that makes plenty of liquid) 1 (16 oz.) can whole kernel corn, liquid and all 1 c. chopped olives (usually about 2 sm. cans) Salt and pepper to taste 1 1/2 tbsp. chili powder Add 1 tablespoon first and correct seasonings. Some like a little more chili powder, some like less. Brown hamburger with chopped onions. Add rest of ingredients and stir and simmer or as long a time as you have (5 minutes to 1/2 hour). Don't let the liquids get too low. Pour hamburger mixture into large baking pan. I use one 13x9x2 1/2 inch deep. Stir up 2 boxes of Jiffy Corn Muffin Mix, pour onto top of hamburger mixture. Bake in a 400 degree oven for 15-17 minutes, or until corn bread is done. |
