CHEESY GRITS CASSEROLE 
6 c. water
1 tsp. salt
2 c. grits
2 c. milk
2 c. grated sharp cheddar cheese
1/2 c. (1 stick) butter, cut into pieces
4 eggs, beaten
2 garlic cloves, minced

Butter a shallow 4 quart casserole. Bring water and salt to boil in large heavy saucepan over high heat. Gradually add grits, stirring rapidly to prevent lumping. Blend in milk, 1 1/2 cups of the grated cheese, butter, eggs and minced garlic. Pour into prepared casserole. (Dish can be prepared 1 day ahead to this point and refrigerated). Sprinkle remaining cheese over top. Bake until set, about 50 minutes. Serve hot. Makes 10 to 12 servings. Great served with ham!
