COMPANY GRITS CASSEROLE | |
1 c. quick cooking grits 2 c. (8 oz.) sharp natural cheddar cheese 1/2 c. butter 1/2 tsp. salt 1/8 tsp. cayenne pepper 2 eggs, beaten 1 tbsp. chopped parsley Prepare grits as directed on package. Add 1 cup cheese, butter, salt and cayenne to cooked grits; stir until cheese is melted and butter blended. Add small amount of hot mixture to eggs; return to hot mixture. Mix well. Pour into greased 2 quart casserole. Bake at 350 degrees for 1 hour. Top with remaining 1 cup cheese during last 10 minutes. Let stand 10 minutes before serving. Sprinkle with parsley. Makes 6 to 8 servings. |
