TACO SALAD | |
1/2 lb. lean ground beef 1/2 med. onion, chopped 7 oz. kidney beans, drained 1/4 pkg. taco seasoning mix 1 head lettuce 1 med. tomato 1 sm. green pepper 1/4 c. shredded Cheddar cheese 1/2 c. shredded Monterey Jack cheese 1/2 c. broken corn chips Taco sauce Crumble meat into medium size glass bowl, mix onion in and microwave at High for 4 1/2 minutes to 6 1/2 (or until it changes color). Stir once to break up the meat during this cooking. Drain and stir in beans and taco seasoning. Microwave (uncovered) at medium 10-13 minutes longer (or until bubbly), stirring once. Meanwhile, tear the lettuce to bite-size pieces, slice the tomato, chop the pepper, and arrange these on a salad plate. Spoon the meat mixture over and top with cheeses and corn chips. Serve at once with taco sauce. |
