LOADED CHEESY PIEROGIES WITH
BACON
 
1 box of pre-made pierogies (such as Mrs. T's- 12 per box) any variety
1 cup of shredded cheddar
1 package of bacon
2-3 tbsp butter
as much sour cream as you see appropriate to top
1/2 cup chopped green onion or 1 medium yellow onion chopped and sauteed in some butter
salt and pepper to taste

WARNING! YOU SHOULD AVOID EVEN READING THIS RECIPE IF YOU HAVE A HEART CONDITION AND/OR ARE INTERESTED IN REMAINING IN SHAPE. HIGH FAT BUT OH SO DELICIOUS.

Bring a large pot of water to a boil with a pinch of salt.

Meanwhile, use scissors to cut several pieces of thawed bacon into thirds. Cut bacon directly into medium/large frying pan to avoid excess dishes. Cook entire pack at one time (the pan WILL be crowded) on medium heat stirring frequently until golden brown. Around 10 minutes. Drain on paper towels.

Add box of frozen pierogies to boiling water- boil for around 3 minutes. The goal is to soften a bit, not heat though. When you are just boiling without the extra cooking step they are done when they float. For this recipe they shouldn't get to that point because they are more likely to stick to the pan and fall apart.

Skip this step if using green onions. Use either a clean frying pan with 2 tbsp of butter or retain some bacon grease (I personally think the dish is already unhealthy enough and I use the butter method) to saute the chopped onions. Stir often until nearly clear with some nice brown parts. Remove onions to a dish.

Use remaining butter from onions or add more butter to frying pan if needed. Add pierogies in a single layer all turned up (so when it's time to flip you'll know none were missed). Add dry ingredients such as salt, pepper, season salt and herbs. Saute for a few minutes on medium-low heat. Flip, a few minutes, flip, repeat until they firm up and some parts turn light brown. Move frequently, if not they will stick to the pan. Add more butter and turn the heat down if they start to stick. Remove to serving platter.

With green onion: top dish with cheese, bacon and green onion. With sauteed yellow onion: top dish with onion, cheese and bacon.

Serve sour cream on the side.
