PIEROGI WITH ONIONS/GARLIC AND
YUM YUM SAUCE
 
8 cheddar cheese pierogi (frozen - can fit 8 pierogies in one large frying pan)
3 spring onions, minced
3 large garlic gloves, minced
salt and pepper, to taste
extra virgin olive oil (EVOO)
1 bunch oresh asparagus
3 tbsp. spicy "yum yum" sauce (Great Value)

Heat frying pan to medium, let pan get hot and add about 1 to 2 tablespoons of oil to pan. Add minced spring onions and minced garlic. Add some pepper, to taste, and sauté until nice golden brown. Remove from pan and set aside. Do not wipe out frying pan before adding pierogi.

Adding a little more oil, about 2 tablespoons to frying pan. Add all 8 frozen cheddar cheese pierogi. Lightly toss pierogi until all are evenly covered with oil. Cook about 8 minutes total, about 4 minutes per side or until nice and brown and thoroughly cooked. Add half of the sautéed onion and garlic mixture to pierogi while cooking, during the last 3 minutes of cooking. Add 3 tablespoons (more or less depending on how much you like) of spicy yum yum sauce.

In another pan. Add about 1 tablespoon of oil. When hot (medium heat is good) add asparagus to pan. Season with salt and pepper, to taste. Cover and stir occasionally until slightly brown but still crisp and hot. Add the rest of the onion and garlic mixture to asparagus while cooking, about half way done cooking.

If you would want you can add long grain wild rice as another side or a salad. But if just 2 people, 4 pierogi per person and a side of asparagus is plenty.
