APPLE CARROT QUICK BREAD 
1 1/2 c. peeled shredded apples
1/2 c. shredded carrots
1/4 c. butter
2 eggs
1 3/4 c. unbleached flour
2/3 c. sugar
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped nuts
1/2 tsp. vanilla

Heat oven to 350 degrees. Grease bottom only of 9 x 5 or 8 x 4-inch loaf pan. In large mixer bowl blend first five ingredients. Lightly spoon flour into measuring cup, level off. Add remaining ingredients and beat well (by hand).

Pour batter into prepared pan. Bake 50-60 minutes. Remove from pan to cool. Refrigerate any leftovers. Makes 1 loaf.
