ITALIAN CHEESECAKE | |
1 1/4 c. flour 1/4 c. sugar 1/2 tsp. salt 1/2 tsp. grated lemon peel 1/2 c. butter 1 egg yolk 2 tbsp. Amaretta Mix first 4 ingredients, then cut in butter until mixture resembles coarse meal. Mix in remaining ingredients and blend well. Press pastry into bottom and sides of 9 inch spring form pan. Bake at 350 degrees for 15 minutes until dry but not browned. FILLING: 2 (15 oz.) ricotta cheese 4 eggs 1/2 c. sugar 1/4 c. flour 1/4 c. amaretta 2 tbsp. golden raisins 1 tbsp. candied orange peel, finely chopped Blend first 4 ingredients in bowl then stir in remaining ingredients. Pour filling into crust and bake at 325 degrees for 1 hour or until cake test done. Remove and cool on rack. Serves 6. |
