BANANA OATMEAL MUFFINS 
1/2 c. softened butter or oil
2 eggs
1 c. mashed bananas (3-4 med. size)
1/2 c. warmed honey
1/2 c. yogurt
1 tsp. baking soda
1 1/2 c. whole wheat pastry flour (regular whole wheat flour is satisfactory)
3/4 tsp. salt
1 c. rolled oats

Preheat oven to 375 degrees and grease 18 muffin tins. In mixing bowl, combine butter, eggs, bananas and honey. Mix yogurt and soda; add to butter mixture. Cream well. Stir together flour and salt. Add to creamed mixture, mixing until just blended. Stir in oats. Fill muffin tins 2/3 full of batter. Bake in preheated oven for 18-20 minutes. Remove from pans and cool on wire rack. Yield: 1 1/2 dozen muffins.
